This is ultimately the answer, but it also depends on what you are being paid vs how much work you are asked to do vs how bored you'll be if there isn't a lot of work.

If my job was to be an admin and they didn't have backups in place and I recommended a backup solution that they ignored/denied/etc, I would make sure to have it in an email and I'd have that email printed out for safe keeping and I really wouldn't care if any type of scenario required a restore from a backup, I'd simply provide the email stating that they didn't want a backup.

Years ago I would have fought for a backup, but I can't change their mind once it is already made up (this assumes I tried to change their mind, initially, by providing reasons why a backup is needed).
