Drinks as a first date/first time meeting

So I'm a guy and there's a couple wickets I like to meet with first date ideas.

1) I will enjoy myself no matter what 2) It's in a public place with people around 3) If my date sucks, I can end it quickly

Some examples that satisfy these: having a beer or coffee while observing a sunset/sunrise or playing chess/pool, meeting them for mountain biking at a bike park, meeting them for snowboarding.

It's important to me that I have fun on the date so I don't view it as wasted time/money. It's important my date feels safe. It's important I don't feel trapped into an hour long dinner/whatever if they suck.

I wouldn't view drinks as low effort and I would never take a woman out to dinner for a first date.
